Garden Pesto Toast

For the toast

• 2 slices sourdough or rustic bread
• 1 tbsp olive oil for brushing

For topping

• 1 ripe avocado
• Juice of 1/2 lemon
• 1 pinch salt
• 2 tbsp basil pesto
• 4 radishes, thinly sliced
• 6 leaves fresh basil or chili flakes (optional)

Instructions

1. Toast the bread until golden and crisp.
2. Mash the avocado with lemon juice and a pinch of salt.
3. Spread avocado mash evenly over the toast.
4. Spoon basil pesto on top of the avocado layer.
5. Finish with sliced radishes and optional basil or chili flakes.
6. Serve immediately while warm and crisp.
