  1. Heat olive oil in a skillet over medium-low heat.
  2. Add tomatoes and a pinch of salt.
  3. Cook slowly for 8-10 minutes until tomatoes soften and release juices.
  4. Toast bread until golden.
  5. Spoon warm tomatoes over toast.
  6. Drizzle with olive oil and finish with flaky salt and herbs if desired.
